  • 23 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn kernels, drained
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 (10.5 oz) can condensed cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded Mexican cheese blend, divided
  • 1 large bag (9.25 oz) Nacho Cheese Doritos, lightly crushed

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a skillet over medium heat, cook ground beef with diced onion and minced garlic until no longer pink. Drain excess fat.
  3. Stir in taco seasoning, black beans, corn, and diced tomatoes; simmer for 2–3 minutes.
  4. In a separate bowl, mix cream of mushroom soup with sour cream until combined.
  5. Layer half of the meat mixture in the baking dish, followed by half of the cream mixture, one cup of cheese, and half of the crushed Doritos. Repeat layers.
  6. Cover with foil and bake for 15 minutes; remove foil and bake for an additional 10 minutes until golden brown.
  7. Let rest for 5–10 minutes before serving; garnish as desired.
