  • 4 oz (115 g) cream cheese, softened
  • 12 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Freshly ground black pepper, to taste
  • 1 pint (2 cups) fresh strawberries, hulled and halved
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • Fresh basil or mint leaves, chopped
  • Additional olive oil for drizzling
  • Black sesame seeds (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, toss the halved strawberries with balsamic vinegar, honey, and a pinch of black pepper.
  3. Spread the strawberries on a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for about 15-20 minutes, or until the strawberries are soft and slightly caramelized. Remove from oven and let cool.
  5. In a food processor, combine the crumbled feta, cream cheese, olive oil, lemon juice, and a pinch of black pepper.
  6. Process until smooth and creamy, scraping down the sides as needed.
  7. Adjust the consistency with a bit more olive oil if necessary.
  8. Spread the whipped feta onto a serving plate or bowl, creating a swirl with the back of a spoon.
  9. Spoon the roasted strawberries over the whipped feta.
  10. Drizzle with additional olive oil and garnish with chopped fresh basil or mint leaves.
