  • 5 ounces whole wheat French bread (cut into small cubes)
  • 2 tablespoons dried cranberries (chopped)
  • 1/2 medium onion (minced)
  • 1 large stalk celery (minced)
  • 4 fresh sage leaves (minced)
  • 2 cups chicken broth
  • 3/4 cups chicken broth for gravy
  • 1 large egg (beaten)
  • 1 teaspoon kosher salt
  • 1/2 tablespoon butter (softened)
  • 1 teaspoon salted butter (softened)
  • 11/4 teaspoon kosher salt for seasoning
  • 1/2 teaspoon turkey or poultry seasoning
  • 1/4 teaspoon kosher salt and fresh pepper (to taste)
  • 1/4 cup all-purpose flour
  • 2 leaves fresh sage for gravy

Instructions

  1. Preheat your oven to 350°F (175°C). In a skillet, melt butter and sauté minced onion and celery until softened.
  2. Combine sautéed vegetables with bread cubes, cranberries, herbs, egg, and broth in a mixing bowl.
  3. Flatten the turkey breast and season both sides with salt. Spread the stuffing evenly over the turkey and roll tightly.
  4. Place the roulade in a roasting pan, brush with butter, drizzle with vinegar, cover loosely with foil, and roast for about 60 minutes or until the internal temperature reaches 165°F (75°C).
  5. For gravy, whisk flour into remaining broth in a saucepan over medium heat until thickened; add seasonings.
