  • 1 bunch radishes, halved (some left whole)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 tbsp whole grain mustard
  • 1 tbsp Dijon mustard
  • 2 tbsp red apple vinegar
  • 1 garlic clove, minced
  • 1/4 cup olive oil
  • 1 tsp honey (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place trimmed asparagus and halved radishes on a baking sheet. Toss with 2 tablespoons of olive oil, salt, and pepper.
  3. Roast vegetables for 20–25 minutes, turning halfway through until they are tender and lightly browned.
  4. In a mixing bowl, whisk together whole grain mustard, Dijon mustard, vinegar, minced garlic, olive oil, and honey (if using) until well combined.
  5. Taste the vinaigrette and adjust seasoning with salt and pepper.
