  • 1 avocado
  • 1 medium carrot
  • 45 cherry tomatoes
  • 68 cucumber slices
  • 2 tbsp red cabbage sauerkraut
  • 2 tbsp white sauerkraut
  • Olive oil (for frying)
  • Salt & pepper (to taste)

Instructions

  1. Heat olive oil in a nonstick pan over medium heat. Crack in the eggs gently and fry until whites are set and yolks are runny. Season with salt and pepper.
  2. While the eggs cook, slice cucumber, julienne or slice carrot, wash cherry tomatoes, and slice avocado.
