  • 4 boneless skinless chicken breasts
  • Salt and pepper (for seasoning)
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • Juice of 1 lemon
  • Zest of 1 lemon
  • ½ cup grated Parmesan cheese
  • 4 cups fresh spinach leaves

  1. Pound the chicken breasts to an even thickness; season both sides with salt and pepper.
  2. Heat olive oil in a large sauté pan over medium-high heat. Cook chicken for 3-4 minutes per side until golden brown; remove from pan.
  3. In the same pan, sauté garlic for 1 minute. Add chicken broth, lemon juice, and zest; bring to a boil. Reduce heat, stir in cream, and simmer for 5 minutes.
  4. Add fresh spinach; cook until wilted. Return chicken to pan, spoon sauce over it, sprinkle with Parmesan, cover, and cook for another 2 minutes.
