Instructions

  1. Preheat the oven to 325°F (163°C) and grease a Bundt or tube pan.
  2. Cream together softened butter and cream cheese until fluffy. Gradually add sugar, mixing until light.

  4. Stir in lemon zest, lemon juice, and vanilla extract. Pour batter into the prepared pan.
  5. Bake for 70-80 minutes or until a toothpick comes out clean. Cool in the pan for 15 minutes before transferring to a wire rack.
  6. For Candied Lemons: In a skillet, combine water and sugar; bring to a simmer over medium heat. Add lemon slices in a single layer. Simmer gently for about 15-20 minutes until translucent. Carefully transfer slices to parchment paper to cool.
