  • 175 g Baking spread (or butter) (softened, unsalted)
  • 175 g Caster sugar
  • 3 large Eggs
  • 2 tsp Vanilla extract
  • 175 g Self-raising flour
  • 25 g Black food coloring
  • 200 g Butter (softened, unsalted) for the buttercream
  • 400 g Icing sugar
  • Green and yellow food coloring
  • 150 g Tinned custard for filling
  • Candy eyes and green sprinkles for decoration

Instructions

  1. Preheat your oven to 140C Fan/325F/Gas Mark 3 and line a cupcake tin with cases.
  2. In a mixing bowl, beat the baking spread and caster sugar until light and fluffy.
  3. Add eggs and vanilla, whisking until combined. Fold in self-raising flour gently.
  4. Mix in black food coloring until well blended.
  5. Divide batter among cupcake cases and bake for 25-30 minutes or until a skewer comes out clean. Cool completely on a wire rack.
  6. Use a cupcake corer or knife to create holes in the center of each cupcake; fill with green-tinted custard.
  7. For buttercream, beat softened butter and icing sugar until smooth; add vanilla, milk, and food coloring to achieve desired shade.
  8. Pipe or spoon buttercream onto cooled cupcakes and decorate with candy eyes and sprinkles.
