1 chicken breast
1 tsp olive oil
1 tsp garlic powder
1 tsp paprika
Salt & pepper, to taste
1 cup cooked rice (brown or white)
1 cup corn kernels
1 cup green beans, chopped
1 cup broccoli florets
1 cup cauliflower florets
Instructions
Preheat the oven to 400°F (200°C). Toss broccoli and cauliflower with olive oil, salt, pepper, and garlic powder in a mixing bowl. Spread on a baking sheet and roast for 20-25 minutes.
While the veggies roast, season the chicken breast with olive oil, garlic powder, paprika, salt, and pepper. Grill or pan-sear for about 5-6 minutes per side until cooked through.
In a cooking pot, sauté corn and green beans in olive oil or soy sauce over medium heat. Stir in the cooked rice until heated.
