  • 4 tablespoons unsalted butter

  • 3 garlic cloves, minced
  • 6 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 6 slices of baguette or crusty bread, toasted
  • 1 1/2 cups shredded Gruyère or Swiss cheese

Instructions

  1. In a Dutch oven, heat olive oil over medium-high heat. Sear the beef short ribs until browned on all sides; remove and set aside.
  2. Add unsalted butter to the pot. Once melted, add onions and cook until golden brown (20–25 minutes). Stir in minced garlic in the last few minutes.
  3. Return short ribs to the pot; pour in beef broth and Worcestershire sauce. Add bay leaf, thyme, salt, and pepper; stir well.
  4. Bring to a boil, then reduce heat to low and cover. Simmer for 2–2.5 hours until short ribs are tender.
  5. During the final stages of cooking, toast bread slices until crispy.
  6. Remove bay leaf from soup before serving; ladle into bowls topped with toasted bread slices and shredded cheese.
