  • 2 Tablespoon butter
  • 3/4 lb top sirloin cubes
  • Salt and pepper to taste
  • 2 cups apple cider
  • 1/2 cup beef broth
  • 1 large onion (chopped)
  • 2 medium carrots (peeled and chopped)
  • 6 large potatoes
  • 1/4 cup milk
  • 1/4 cup sour cream

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a cast iron skillet, melt butter and olive oil over medium-high heat. Season sirloin with salt and pepper, then brown in the skillet for about 6-8 minutes.
  3. Add chopped onions and carrots; cook for another 4-5 minutes.
  4. Sprinkle flour over the mixture, stir, and heat for 1-2 minutes before adding apple cider and beef broth. Bring to a boil.
  5. Transfer to an oven-safe pot, cover, and bake for 1 – 1½ hours.
  6. Meanwhile, boil potatoes until tender, drain, and mash with milk and sour cream until creamy.
  7. Serve the stew over mashed potatoes.
