  • 8 oz dry rotini pasta
  • 9 oz hard turkey slices
  • 6.5 oz turkey pepperoni
  • 1 cup canned artichoke hearts
  • 2 cups cherry tomatoes
  • 1 cup olives
  • ½ cup pepperoncini
  • 8 oz mozzarella pearls
  • Fresh basil
  • ½ cup olive oil
  • ¼ cup red apple vinegar
  • 2 cloves garlic, minced
  • 1 Tbsp Italian seasoning
  • ¼ tsp red pepper flakes
  • Salt and black pepper, to taste

Instructions

  1. Cook the rotini pasta according to package directions until al dente, then drain and cool.
  2. In a jar, whisk together olive oil, red apple vinegar, minced garlic, Italian seasoning, red pepper flakes, salt, and black pepper for the vinaigrette.
  3. Chop turkey slices and pepperoni into bite-sized pieces.
  4. Halve cherry tomatoes and slice olives and red onion thinly.
  5. In a large mixing bowl, combine cooled pasta with turkey, artichokes, tomatoes, olives, pepperoncini, mozzarella pearls, red onion, and basil.
  6. Pour the vinaigrette over the salad and toss until evenly coated. Chill for at least 30 minutes before serving.
