  • 15.87 oz Mascarpone cheese
  • 1 tsp Vanilla extract
  • 1/2 cup Pumpkin puree
  • 2/3 cup Granulated sugar
  • 1/3 cup Brown sugar
  • 2 tsp Pumpkin pie spice
  • 1/4 tsp Kosher salt
  • 2 cup Heavy cream (cold)
  • 28 Ladyfingers
  • 2 cups Coffee (espresso or strong coffee)

Instructions

  1. Prepare espresso and let it cool.
  2. In a mixing bowl, combine mascarpone cheese, sugars, salt, and pumpkin pie spice; mix until smooth.
  3. Add pumpkin puree and mix until fully incorporated.
  4. Whip cold heavy cream until thick and fold into the mascarpone mixture.
  5. Briefly dip ladyfingers in coffee and layer them in a baking dish.
  6. Spread half of the mascarpone mixture over ladyfingers; repeat with another layer of dipped ladyfingers.
  7. Pipe remaining cream over the top and chill for at least 4 hours before serving.
