  • 1 lb boneless, skinless chicken breasts
  • 12 oz rotini pasta
  • 4 cloves garlic
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • Salt and freshly ground black pepper to taste

Instructions

  1. Cook rotini in salted boiling water for 8-10 minutes until al dente. Drain and reserve 2 tablespoons of pasta water.
  2. Season chicken strips with Cajun seasoning, garlic powder, salt, and pepper.
  3. In a skillet, heat olive oil and butter over medium-high heat. Sear chicken strips for about 3-4 minutes on each side until golden brown and cooked through.
  4. In the same skillet, lower heat and add remaining butter. Sauté minced garlic for about 30 seconds.
  5. Stir in heavy cream and milk; bring to a gentle simmer before adding Velveeta cheese. Mix until melted.
  6. Add mozzarella and Parmesan cheese, stirring until the sauce thickens; use reserved pasta water if needed to adjust consistency.
  7. Toss cooked rotini in the sauce until evenly coated.
  8. Serve topped with garlic chicken strips and garnish with fresh parsley.
