  • 1 1/2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 5 tablespoons unsalted butter (softened)
  • 3/4 cup light brown sugar (packed)
  • 1 teaspoon cinnamon
  • 2 tablespoons cake flour
  • 1 cup powdered sugar
  • 1/2 teaspoon cinnamon
  • 3 tablespoons unsalted butter (melted and cooled)
  • 2 1/2 tablespoons milk

Instructions

  1. In a mixing bowl, cream together the butter, granulated sugar, and brown sugar until smooth. Add eggs and vanilla; mix until fluffy.
  2. In another bowl, whisk together cake flour, cornstarch, baking soda, baking powder, and salt. Gradually combine with the wet ingredients until mixed well. Chill the dough for one hour.
  3. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  4. For the filling, mix softened butter with brown sugar, cinnamon, and cake flour until smooth.
  5. Scoop out chilled dough and create wells to place filling inside before sealing and shaping into cookies.
  6. Bake for about 11–13 minutes or until edges are golden brown. Cool on a wire rack.
  7. For the glaze, combine ingredients until smooth and drizzle over cooled cookies.
