  • 1 ½ cups graham cracker crumbs
  • 2 tablespoons granulated sugar
  • ⅓ cup unsalted butter (melted)
  • 4 packages cream cheese (softened)
  • 1 ¼ cups granulated sugar
  • ½ cup sour cream
  • 2 teaspoons vanilla extract
  • 5 large eggs (room temperature)
  • ½ cup rainbow jimmies
  • whipped cream for topping

Instructions

  1. Preheat your oven to 350°F.
  2. For the crust, mix graham cracker crumbs and sugar in a bowl, then blend in melted butter until combined. Press into the bottom of a springform pan.
  3. In another bowl, beat softened cream cheese until smooth. Gradually add sugar and mix until incorporated. Add sour cream and vanilla extract; mix well.
  4. Beat in eggs one at a time, mixing gently after each addition. Fold in rainbow jimmies.
  5. Pour filling over crust and bake for about 60 minutes until edges are set but the center is slightly wobbly.
  6. Cool completely before removing from pan. Top with whipped cream before serving.
