  • 2 tablespoons unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2/3 cup mashed ripe banana (2 medium sized)
  • 1/2 cup sour cream
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon table salt
  • 1 teaspoon cinnamon
  • 3/4 cup graham cracker crumbs
  • 2/3 cup whole milk
  • 1 cup miniature chocolate chips, divided
  • 1 cup miniature vegan marshmallows bits, divided

Instructions

  1. Preheat your oven to 400°F (200°C) and line a muffin pan with cupcake liners.
  2. In a mixing bowl, beat melted butter and brown sugar until combined. Stir in egg, vanilla extract, mashed banana, and sour cream until smooth.
  3. In another bowl, mix flour, baking powder, baking soda, salt, cinnamon, and graham cracker crumbs.
  4. Gradually combine dry ingredients into wet mixture while alternating with whole milk until just mixed (lumps are okay).
  5. Gently fold in chocolate chips and vegan marshmallows.
  6. Fill muffin liners two-thirds full with batter and top with remaining chocolate chips and marshmallows.
  7. Bake for about 16 minutes until golden brown. Cool slightly before transferring to wire racks.
